I just looked at alacarte. It wants to load a lot more gnome stuff than I want. It's not worth it to me.

It's not lxmed. Go into synaptic and search "alacarte". Then click on "get screenshot" and you will see it looks just like the one I'm using...the same one on the Mint main editions. It should install from synaptic without any trouble, but I don't know if it requires any further ...

I'm actually working off of Ultimate Edition Lite 3.0 and it came with the menu editor installed. It's the same one on the Mint main editions. For some reason, they don't put it on Mint LXDE. I don't know about that download problem, but did you try the LXDE versions of Ubuntu and Mint? I'm currently running Lubuntu 11.04, Lubuntu 11.10, and Mint 11 LXDE.
