Each item on the LXDE menu, when right-clicked, has an option Add to desktop. That's how I've been doing it all this time.

Have you tried logout now? I have tried the command shutdown now, which works with other desktops, but haven't tried it with LXDE.

I recently learned an easier way to restore the default panel, is to rename the ~/.config/lxpanel directory to something else (e.g. lxpanel-bad), reboot and log back in. It will create a new ~/.config/lxpanel directory with the new default panel showing.

Linux distributions that offer LXDE, should have a package task-lxde, which will install the LXDE desktop to an existing installation.

I can confirm that this works with the same PCManFM Display preference to show full file names.

The local group had one installfest at a library west of Boston back in 2018, IIRC, there was some call for it from folks out that way. But subsequent installfests were back at the local university (in Cambridge), until they had to stop them due to the pandemic.

But, we still meet online. :)
