can you change the desktop pater settings to display 3 or 4 desktops instead of 2? That option is grayed out

Try running "obconf" and then Desktops -> Number of desktops.

thanks, obconf did the trick. In ubuntu I had to install it first, though. It did generate some errors when run from the command line, for what it's worth.

Number of desktops is panel-independent. If you switch to KDE and change the number to 10, then it will also change in LXDE.
You should have use your current window manager configurator. LXDE default WM is OpenBox, so I suggested using it.
